The first Hinoki collection provides a refined take on the quintessential Japanese chef’s knife. Designed by company founder Hamish Grace, the knives have a minimal look. Hand-forged in Sakai, Osaka, by a family who has been perfecting the art of blade-making for three generations, the knives feature a similar metal to the one used to make swords. The company uses a secret method to darken the blades and turn them black. This process adds the perfect finishing touch to the ultra-sharp knives that also have excellent edge retention and provide impressive aerodynamic efficiency. Sent from Japan to Adelaide, Australia, each knife reaches the hands of master woodworkers. They use a blend of Japanese and Scandinavian techniques while carving all of the handles by hand. Available in oak or walnut, the handles also come with a black finish that create a stylish monochrome design.
