Based in Melbourne, Toji Sake aims to bring Japanese tradition into the modern Australian food scene. The name Toji means “brew master” and refers to the artisans who use their skill along with tradition and local ingredients to create authentic sake. Brand co-founder Yuta Kobayashi has drawn inspiration from childhood memories for the Toji Sake line, which helps to recreate the classic sake drinking ritual in a contemporary context. Dedicated to authenticity, the company uses traditional techniques and premium ingredients in order to celebrate this symbol of Japan.
The brand’s own brew master has over 40 years of experience. He uses rice from the world-renowned Niigata Prefecture as well as water sourced from the Asahi mountains to craft the Tōji Junmai Daiginjo and the Tōji Junmai Ginjo sake. If the former represents the highest grade of sake, the latter offers a lighter take on the traditional drink. The Tōji Junmai Daiginjo has subtle apple notes, while Tōji Junmai Ginjo has a light kiwi flavor. Both products feature a minimalist design, with black and white tones used alongside simple lettering. Crisp, clean, and smooth, this modern sake honors tradition with a contemporary twist.
