The brand’s time-consuming chocolate making process involves many steps to bring out the best flavors from the cacao beans. And it all starts with the sourcing stage. By working only with trusted farmers who value quality and craftsmanship, the company sources only the finest cacao. Before reaching the company’s workshop in Singapore, the cacao beans undergo a fermenting and a drying process. After sorting the beans by hand, the team then roasts them to develop their complex flavor profile.

Cracking and winnowing takes the cacao beans to the pre-refining stage. Committed to eco-friendly practices, Fossa Chocolate uses the shells left over from this process as garden mulch. The next step involves refining and conching, which ensures a smoother texture and also removes volatile cacao acids to improve flavor. Finally, the team tempers the chocolate to create a high-gloss and clean snap, and then molds it into bars before packaging each bar by hand.

Apart from single origin chocolate, the brand also offers a stunning artisan line that introduces Asian flavors to the world. Chocolate bars from this range include white sesame and seaweed, sake, or lychee rose, among many others.
