Photographer Howard Sooley captured a series of serene images of snowy forest vistas, 19th century farm houses and home grown delicacies in and around restaurant Fäviken Magasinet in Northern Sweden. Currently one of the hottest culinary spots in Europe, this 12 seat restaurant has a waiting list of about 2 to 3 months on average. Chef Magnus Nilsson set out to create his own version of Scandinavian locavore cuisine by using the freshest seasonal produce and sourcing only local ingredients combined with his impeccable traditional Swedish technique. Since the grounds of Fäviken are covered with in snow for more than 6 months out of the year, Nilsson relies more on pickling, fermenting, curing and some other old fashioned preservation techniques through the seasons, he calls this rustic dining experience serving “real food”. So if you travel to Sweden and don’t want to miss the opportunity to experience this superb restaurant, we suggest to plan your trip ahead of time and check the waiting list.
